I saw a bag of small pickles, 8 for 99 cents. Since cucumbers are pretty pricey these days, thought I would try out these pickles and see what they were like. Luckily, I also saw Curiously Ravenous’ recipe for sweet wasabi pickles earlier this week. These turned out great and were a success, I’m going back for more of these pickles at the Dollar Store.
Sweet Wasabi Pickles
4 small pickles, sliced extra thin
4 tbsp rice wine vinegar
4 tbsp mirin
2-3 tsp sugar (depending on how sweet you like them)
2-3 tbsp wasabi paste
1 tsp red pepper flakes
Spread the cucumber slices in a thin layer in a pyrex bowl. Enough so that they do not sit mounded.
Whisk together vinegar, mirin, sugar, and wasabi. Pour over the cucumbers. Sprinkle the pepper flakes on top.
Stir so marinade is evenly spread.
You can eat them right away, or let marinade in the fridge for a few hours. Transfer to a canning jar.
